Recordium is a easy to use recording app that sports a nice interface and customizable recording settings.

Voice Dream Mail

Voice Dream Mail is a text-to-speech app designed for reading your mail. While it is suited for a very particular workflow, its swipe gesture navigation and simple interface is very helpful for eye-free email viewing/triage.
